 Football Cheese Blitz

Ingredients:

2 cup (16 oz) shredded sharp Cheddar cheese
2 packages (8 oz each) reduced fat cream cheese, softened
1/4 cup Parmesan cheese, grated
1/2 cup light or fat free miracle whip dressing
1/2 cup chopped green onions
1/4 tsp black pepper
1/4 tsp cayenne pepper
chopped pecans to coat
red pepper strips for garnish

Directions:

In a large mixing bowl, add dressing and cheeses, blend with electric mixer until well blended.  Add onion, black and cayene pepper and mix well.  Cover and chill in refrigerator for at least 2 hours or overnight.
Once chilled, place onto a serving platter and spread and shape the mixture into a football.  Coat with chopped pecans and garnish with red pepper strips for laces.  Serve with your favorite crackers and fruit.
